Fragrant Rice And Cashew Pilaf

1 1/2 cups brown rice

(basmati or Texmati or jasmine or wehani

OR other specialty rice)

2 tablespoons nonhydrogenated margarine

OR whipped butter

3 scallions -- thinly sliced

1/2 lemon -- Juice of

1/3 cup toasted chopped cashew pieces

salt and freshly ground pepper -- to taste

The simplicity of this recipe highlights the aroma and flavor of specialty

brown rice. If you don't want to search for one of these more exotic types

of rice, long grain brown rice will do. This tasty side dish can enhance

many meals.

 

1. Bring 4 cups water to a simmer in a large saucepan. Stir in the rice,

cover, and simmer gently until the water is absorbed, about 35 minutes.

 

2. Stir the remaining ingredients into the rice, and serve.
