I don't believe them. * Exported from MasterCook * Curried Red Lentil and Spinach Soup Recipe By :Vegetarian 5-Ingredient Gourmet by Nava Atlas Serving Size : 6 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon light olive oil 1 cup finely chopped onion 1 1/2 cups red lentils -- rinsed 1 teaspoon curry powder 10 ounces frozen chopped spinach -- thawed salt -- to taste additional curry powder -- to taste 1. Heat oil in a soup pot. Add onion and saute over medium heat until golden. 2. Add lentils and 6 cups water and bring to a simmer. Stir in 1 teaspoon curry powder, cover and simmer very gently for 35 to 40 minutes. 3. When lentils are mushy, stir in the spinach. Add 1/2 cup water if too thick. Season with salt and additional curry powder, if desired. 4. Simmer for another 5 minutes. IF time allows, let the soup stand off the heat for an hour or so to develop flavor.
