Guest guest Posted September 12, 2001 Report Share Posted September 12, 2001 * Exported from MasterCook * Toasted Orzo and Rice Pilaf Recipe By :Complete Vegan Cookbook by Geiskopf-Hadler and Toomay Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup orzo pasta (4 ounces) 1 tablespoon olive oil 1 1/2 cups basmati rice (white) 1 garlic clove 1/2 teaspoon salt Several grinds black pepper 1/2 cup minced fresh flat-leaf (Italian) parsley 3 cups vegetable stock 1. Preheat a toaster oven or conventional oven to 400F. Place orzo on a baking sheet and toast for about 6 minutes, stirring or shaking the pan occasionally, until the orzo is lightly and evenly browned. Immediately remove it from the baking sheet and set it aside. 2. Heat the oil in a heavy-bottomed saucepan over medium heat and saute the rice and garlic for 3 minutes, stirring frequently. Add toasted orzo, salt, pepper, parsley and stock. Bring to a simmer. Cover, reduce the heat to very low. Cook 25 minutes. Without disturbing the lid, remove the from heat and allow pot to stand for 10 minutes. 3. Transfer the pilaf to a serving dish and toss gently with two forks to break up any clumps and to distribute the ingredients evenly. Serve hot.
