Guest guest Posted September 12, 2001 Report Share Posted September 12, 2001 * Exported from MasterCook * Cauliflower in Coriander Cashew Sauce (Curry) Recipe By :Complete Vegan Cookbook by Geiskopf-Hadler and Toomay Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup raw cashews 2 tablespoons raw sesame seeds 1 cup seeded and diced tomato -- (fresh or canned) 1/4 cup chopped fresh cilantro 2 tablespoons fresh lime juice 2 teaspoons ground coriander seed 2 garlic cloves -- minced 1 teaspoon turmeric 1 teaspoon sugar 3/4 teaspoon salt 1/4 teaspoon cayenne pepper 1 cup vegetable stock 6 cups chopped cauliflower (1 medium head) 1 cup fresh shelled peas -- or frozen (rinsed) 1. In a blender, combine the cashews and sesame seeds. Grind them into a powder, then add the tomato, cilantro, lime juice, coriander, garlic, turmeric, salt, sugar and cayenne. Blend until fairly smooth, then add the vegetable stock and puree. 2. Place the puree and the cauliflower in a large saute pan over medium high heat and bring to a simmer. Reduce the heat to medium low, cover and simmer for 10 minutes. Lift the lid and stir the contents of the pan. If the sauce is sticking to the bottom, stir in another 2 tablespoons of stock or water, then replace the lid and cook 5 minutes. Add the peas , cover and cook until the peas are tender, about 2 minutes for frozen peas; 4 for fresh. Serve hot. TIP - If using frozen peas, place them in a colander and rinse briefly under warm water to melt off any ice crystals before adding them to the dish.
