Apple sauce cake

1 1/2 cup whole wheat flour

3/4 cup sugar

1 cup applesauce

1 cup finely shredded carrot

1 med. banana

1/2 cup crushed canned pineapple

1 tblsp cinnamon -- (1 to 2)

1 tsp baking powder

1 tsp salt

1 tsp vanilla extract (or 2½ tsp vanilla

flavoring)

 

Combine all the dry ingredients in a large mixing bowl.

 

Mash the banana until it's achieved an egg-like consistency, and mix it in with

the other wet ingredients. Dump the carrot, applesauce, and crushed pineapple

into the wet ingredients.

 

Fold in the dry ingredients, and stir until well blended.

 

Bake in a pan about 8 " x9 " at 350°F, for about 30 minutes. It should be really

moist, without being undercooked.

 

This recipe does not double well. I tried making it for a large group, and just

doubled all the ingredients. It got all gooey and wouldn't cook right. It cooks

best when it's shallow in the pan, and the pineapple doesn't have too much juice

in it.
