Green Chile Black Beans

1 tablespoon extra virgin olive oil

1 medium onion -- finely chopped

2 16 oz cans black beans (or 4 cups cooked black beans

from about 1 2/3 cup raw) -- drained & rinsed

1 4 or 7 oz can chopped green chiles

 

Heat oil in a large saucepan. Add the onion and saute over medium heat until

golden.

 

Add the beans and chiles and about 1/4 cup of water. Cook over medium heat

until the mixture comes to a gentle simmer.

 

Remove about 1/2 cup of the beans, mash them, and return to the saucepan.

Simmer gently for another 5 minutes and serve.
