Guest guest Posted September 11, 2001 Report Share Posted September 11, 2001 taste tested -- negative review * Exported from MasterCook * Curried Red Lentil and Spinach Soup Recipe By :Vegetarian 5-Ingredient Gourmet by Nava Atlas Serving Size : 6 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon light olive oil 1 cup finely chopped onion 1 1/2 cups red lentils -- rinsed 1 teaspoon curry powder 10 ounces frozen chopped spinach -- thawed salt -- to taste additional curry powder -- to taste 1. Heat oil in a soup pot. Add onion and saute over medium heat until golden. 2. Add lentils and 6 cups water and bring to a simmer. Stir in 1 teaspoon curry powder, cover and simmer very gently for 35 to 40 minutes. 3. When lentils are mushy, stir in the spinach. Add 1/2 cup water if too thick. Season with salt and additional curry powder, if desired. 4. Simmer for another 5 minutes. IF time allows, let the soup stand off the heat for an hour or so to develop flavor. Heat through as needed before serving. Discrepancy: book underestimates cals and fat: 100 cals, 2 gram fat. TEST: Made as prescribed: except I first warmed the curry powder, then added the lentils and water in step 2. Added salt and additional curry. It was flat. Was neither " spicy " nor " soothing. " Rescued it with half a can of rotel, a large cube of vegetable bouillon, curry, salt, pepper, 2 tsp pureed ginger from jar, garlic, pinch of sugar, some herbs, more oil, some butter, finely some garam masala. Still no depth: all surface. It should reheat well. Description: " Not as good as advertised -pat 09-11-01 " - - - - - - - - - - - - - - - - - - - Per Serving (excluding unknown items): 205 Calories; 3g Fat (12.4% calories from fat); 15g Protein; 32g Carbohydrate; 17g Dietary Fiber; 0mg Cholesterol; 41mg Sodium. Exchanges: 2 Grain(Starch); 1 Lean Meat; 1 Vegetable; 1/2 Fat. Serving Ideas : Pita or potato and salad (see Cranberry Slaw or Red Cabbage, Carrot and Apricot Salad).
