Guest guest Posted September 11, 2001 Report Share Posted September 11, 2001 * Exported from MasterCook * Squash Kugel Recipe By :Recipe by Sybil Kaplan Serving Size : 3 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds squash -- grated 1 small onion -- grated a small amount of salt 1 small potato -- peeled and grated 1/2 cup flour 2 eggs 2 tablespoons oil 1 1/4 teaspoons baking powder 1/2 teaspoon salt Place squash and onion in a colander. Toss and sprinkle with salt. Let sit 1 hour. Preheat oven to 350 degrees. Rinse and drain squash and onions and put in a bowl. Add grated potato, flour, eggs, oil baking powder and salt to squash mixture. Mix well. Pour into a greased casserole dish. Bake for 1 hour and 20 minutes. Cut into squares to serve.
