Sauteed Vegetables

2 tablespoons olive oil

1/4 cup diced onion

1 garlic clove -- chopped

3 cups sliced vegetables of your choice (see

note)

2 tablespoons chopped basil

salt -- to taste

freshly ground black pepper -- to taste

 

Heat the olive oil in a large skillet over medium heat and saute the onion and

garlic for one minute.

 

Add the vegetables, reduce heat to low, and saute, stirring constantly, until

tender but firm, about five minutes.

 

Sprinkle with basil and season with salt and pepper.

 

Remove from heat and keep warm
