Brown Rice Salad with Mustard and Cheese Dressing

Amount Measure Ingredient -- Preparation Method

1 cup long-grain brown rice

or up to 1 1/2 cups (6-8-oz)

salt and black pepper

4 ounces green beans -- trimmed

2 tablespoons French style vinaigrette

4 sticks green celery -- thinly sliced

2 canned red pimiento -- thinly sliced

or 1 red bell pepper, seeded, thinly sliced

4 ounces salted peanuts

MUSTARD AND CHEESE DRESSING -- see recipe

lettuce leaves -- to serve

 

Cook the rice in alted water until tender. Drain if necessary, run under cold

water and drain again; or leave until cold.

 

Meanwhile, cut the beans into 1 inch lengths and blanch in boiling water for 2

minutes. Drain, cool and place in a bowl with the french dressing (vinaigrette).

Add the celery, pimiento and peanuts. Season lightly with salt and generously

with pepper. Mix well.

 

Make the mustard and cheese dressing.

 

When the rice is cold, fold in the dressing. Arrange on a bed of mixed lettuce

leaves and spoon salad on top.

 

TIP - Another way to serve this dish is to pack the rice salad tightly into a

well-oiled ring pan and unmold over the salad leaves. Fill the middle of the

ring with more salad leaves and the bean mixture.

 

VARIATION: unsalted peanuts, honey roasted peanuts, raw cashews etc. Mixed

brown and wild rice or a rice medley.

3 tablespoons olive oil

4 teaspoons wine vinegar

1 teaspoon lemon juice

1/2 teaspoon mustard powder -- (level measure)

salt and black pepper

1/2 teaspoon sugar

or 1 tsp clear honey

1 garlic clove -- crushed

3 tablespoons light cream cheese -- or fromage frais

 

Put the oil, vinegar, lemon juice, mustard, seasonings, sugar, garlic and soft

cheese into a bowl and whisk well or puree in a food processor until smooth.

Serve as a dressing or salad.
