Guest guest Posted September 9, 2001 Report Share Posted September 9, 2001 * Exported from MasterCook Mac * Spinach Pasta and Rice Recipe By : Mr. Food's Italian Kitchen by Art Ginsburg Serving Size : 4 Preparation Time :0:00 Categories : Italian Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1/2 cup mini ring or orzo pasta 1 cup long-grain white rice 10 ounces frozen chopped spinach -- thawed and drained 5 1/4 cups vegetable broth In a large skillet, heat the oil over medium-high heat. Add the pasta and cook for 1 to 2 minutes, or until golden, stirring frequently. Stir in the remaining ingredients and bring to a boil. Reduce the heat to low, cover and simmer for 20 to 2 minutes, or until all the liquid is absorbed and the rice is tender. - - - - - - - - - - - - - - - - - - NOTES : This recipe has been modified to make it vegetarian.
