Perfect Pesto Potatoes

Amount Measure Ingredient -- Preparation Method

1/3 cup pesto sauce

1/2 teaspoon salt

1/4 teaspoon black pepper

6 medium baking potatoes -- cut in 1 " chunks

 

Preheat the oven to 425F. In a large bowl, combine the pesto

sauce, salt, and pepper; mix well. Add the potatoes and toss

until well coated. Place the potatoes on a large rimmed baking

sheet. Bake for 35 to 40 minutes, or until crisp and brown on the

outside and tender on the inside, turning halfway through the

baking.

NOTES : Why not sprinkle these with grated Parmesan cheese

just before serving for extra cheesy flavor? I like to use potatoes

with the skin on, but if you prefer, you can peel them first.
