Guest guest Posted September 9, 2001 Report Share Posted September 9, 2001 * Exported from MasterCook Mac * Golden Polenta Recipe By : Mr. Food's Italian Kitchen by Art Ginsburg Serving Size : 6 Preparation Time :0:00 Categories : Grains Italian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups water 1/4 cup butter 1 1/2 teaspoons salt 2 cups fine-ground yellow cornmeal Place the water, butter and salt in a large saucepan and bring to a boil over high heat. Remove from the heat and slowly whisk in the cornmeal until the mixture is smooth and no lumps remain. Spoon the mixture into a 9 " x 5 " loaf pan that has been coated with nonstick cooking spray, packing it down firmly. Allow to cool for at least 1 hour, or until firm. Invert the pan over a cutting board to remove the polenta. Cut into thick slices and serve. - - - - - - - - - - - - - - - - - - NOTES : Polenta can be served as is and can also be sauteed, grilled, and even deep fried. it also makes a great base for grilled vegetables.
