Guest guest Posted September 9, 2001 Report Share Posted September 9, 2001 * Exported from MasterCook Mac * Roasted Red Pepper Sauce Recipe By : Mr. Food's Italian Kitchen by Art Ginsburg Serving Size : 8 Preparation Time :0:00 Categories : Italian Pasta & Sauces Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 large red bell peppers -- quartered 3 tablespoons olive oil -- divided 1 tablespoon minced garlic 28 ounces canned crushed tomatoes 1/4 cup chopped fresh parsley 1/2 teaspoon crushed red pepper 1/2 teaspoon salt 1/4 teaspoon black pepper Preheat the oven to 460F. In a medium-sized bowl, toss the bell peppers with 1 tablespoon olive oil until well coated. Place on a large rimmed baking sheet and roast for 25 to 30 minutes, or until tender. Place in the bowl of a food processor that has been fitted with its metal cutting blade; puree the peppers. in a large pot, heat the remaining 2 tablespoons olive oil over medium-low heat and saute the garlic until golden. Add the remaining ingredients and bring to a boil, then add the pureed peppers.
