Guest guest Posted September 8, 2001 Report Share Posted September 8, 2001 * Exported from MasterCook Mac * Tortellini Soup Recipe By : Mr. Food's Italian Kitchen by Art Ginsburg Serving Size : 8 Preparation Time :0:00 Categories : Italian Soups, Stews & Chilis Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1 medium onion -- chopped 29 ounces canned diced tomatoes -- undrained 2 tablespoons balsamic vinegar 2 garlic cloves -- chopped 1/4 teaspoon dried oregano 1/4 teaspoon salt 1/4 teaspoon black pepper 4 cups water 8 cups vegetable broth 14 ounces frozen cheese tortellini 2 tablespoons chopped fresh basil In a large soup pot, heat the oil over medium-high heat. Saute the onion until tender, then add the tomatoes, vinegar, garlic, oregano, salt and pepper; cook for 5 to 7 minutes, or until heated through. Add the water and broth and bring to a boil. Add the tortellini and basil and cook for 6 to 8 minutes, or until the tortellini is tender.
