Guest guest Posted September 8, 2001 Report Share Posted September 8, 2001 * Exported from MasterCook Mac * Spinach-Potato Soup Recipe By : Mr. Food's Italian Kitchen by Art Ginsburg Serving Size : 8 Preparation Time :0:00 Categories : Italian Soups, Stews & Chilis Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 3 medium potatoes -- diced 1 medium onion -- chopped 1/2 teaspoon minced garlic 31 ounces great northern beans, canned -- undrained 5 1/2 cups vegetable broth 1 1/2 cups water 5 ounces fresh spinach, washed -- trimmed and chopped 1/2 teaspoon salt 1/2 teaspoon black pepper In a large soup pot, heat the oil over medium-high heat. Add the potatoes, onion, and garlic ans saute for 4 to 5 minutes, or until the vegetables are tender. Mash half of the beans with a fork and add to the soup pot along with the remaining ingredients.
