Spicy Sausage and Bean Soup

1 tablespoon olive oil

1 pound Gimme Lean, sausage style

1 small onion -- chopped

2 garlic cloves -- minced

62 ounces great northern beans, canned

-- undrained

3 1/2 cups vegetable broth

14 1/2 ounces canned diced tomatoes --

undrained

1 teaspoon dried basil

1/2 teaspoon black pepper

 

In a large soup pot, heat the oil over medium-high

heat. Add the sausage, onion, and garlic and cook for

5 to 6 minutes, stirring frequently to break up the

meat. Add the remaining ingredients and bring to a

boil. Reduce the heat to medium-low and simmer,

uncovered, for 30 minutes.

NOTES : This recipe has been modified to make it

vegetarian.
