Guest guest Posted September 8, 2001 Report Share Posted September 8, 2001 * Exported from MasterCook Mac * Pasta e Fagiole Recipe By : Mr. Food's Italian Kitchen by Art Ginsburg Serving Size : 8 Preparation Time :0:00 Categories : Italian Soups, Stews & Chilis Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 2 medium onions -- chopped 6 garlic cloves -- minced 43 1/2 ounces vegetable broth 40 ounces canned cannellini beans (2 cans) -- undrained 14 1/2 ounces canned diced tomatoes -- undrained 1/2 teaspoon salt 1 teaspoon black pepper 1 cup uncooked ditalini pasta 1/2 cup chopped fresh parsley In a large soup pot, heat the oil over medium heat ad saute the onions and garlic for about 10 minutes, or until the onions are tender. Stir in the broth, 1 can cannellini beans, the tomatoes, salt and pepper; cook for 30 minutes, stirring occasionally. Meanwhile, cook the pasta according to the package directions and drain. Using a potato masher, gently mash the beans and tomatoes in the soup pot. Add the remaining can of beans, the parsley and the cooked pasta. Reduce the heat to low and simmer for 30 minutes, stirring occasionally. - - - - - - - - - - - - - - - - - - NOTES : Ditalini is a small tube-shaped pasta that's perfect here, but any other type of small pasta can be used.
