Lemon Slices

1 1/2 cups graham crackers -- crushed*

1/2 cup margarine -- melted

1/3 cup brown sugar

1/2 teaspoon baking powder

10 ounces soy milk

1/2 cup soy milk powder

1/2 cup lemon juice

 

Preheat oven to 350F. Combine first four ingredients together and pack firmly

into an 8 x 8-inch Pyrex dish. In another bowl, combine milk, milk powder, and

lemon juice. Spread over graham cracker crust. Bake for twenty to twenty-five

minutes.

*33 graham crackers = 1 1/2 cups when crushed
