Tomato and Peanut Butter Soup

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

2 onions -- chopped

1 green pepper -- chopped

1/2 red pepper -- chopped

4 garlic cloves -- minced

1 28 oz can crushed tomatoes

1 cup peanut butter

1/4 cup ketchup

1/4 cup rice vinegar

1/4 cup lime juice

1 teaspoon jalapeno sauce

1 teaspoon cumin

1/2 teaspoon cayenne pepper

2 cups onion soup stock

salt and pepper to taste

sugar to correct taste

 

Saute onion, peppers, and garlic together in olive oil in a large heavy pot

until onions are translucent. Add tomatoes, peanut butter, ketchup, vinegar,

lime juice, jalapeno sauce, cumin, and cayenne. Briing to a boil. Add onion

soup stock, a little at a time, stirring constantly. Simmer for ten minutes.

Serve with toasted garlic bread.
