In a large skillet with a lid, saute the onion and bell pepper in the olive oil and a little bit of water over medium heat until softened. 2. Add the remaining ingredients and bring to a boil. Reduce heat to a simmer, cover and cook for 20 to 25 minutes until the rice is done. Small amounts of water can be added along the way if necessary.
