Chipotle Vegetable Wrap and Spanish Rice

1 package wraps (10-12-inch tortillas)

(chipotle or flavor of choice)

CONTENTS OF THE WRAP:

cooked beans

(Scarlet Runner Beans)

grilled sliced vegetables

(zucchini, squash, onions and portobello mushrooms)

grated Cheddar cheese

spanish rice (packaged or see recipe)

sour cream

salsa choice

(Vidalia Onion Salsa)

fresh tomato chunks for garnish

 

Wrap ingredients as you would a burrito, open on one end.

Spanish Rice (Regina)

Amount Measure Ingredient -- Preparation Method

1 onion -- chopped

1 green bell pepper -- chopped

2 tablespoons olive oil

1 cup long-grain rice

1 tablespoon mustard

8 ounces canned tomato sauce

salt and pepper

1 cup water

 

1. In a large skillet with a lid, saute the onion and bell pepper in the olive

oil and a little bit of water over medium heat until softened.

 

2. Add the remaining ingredients and bring to a boil. Reduce heat to a simmer,

cover and cook for 20 to 25 minutes until the rice is done. Small amounts of

water can be added along the way if necessary.
