Guest guest Posted September 6, 2001 Report Share Posted September 6, 2001 * Exported from MasterCook * Greek Salad With Creamy Feta Dressing Recipe By :Regina Campbell Serving Size : 4 Preparation Time :0:00 Categories : 2send Season 5 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- DRESSING: 1/4 cup cottage cheese 3 tablespoons seasoned rice vinegar 2 1/2 tablespoons olive oil 1/4 cup French feta cheese -- crumbled 1/4 teaspoon salt 1/8 teaspoon pepper 2 tablespoons milk 1 small cucumber -- peeled and quartered seeded and sliced 2 cups chopped tomatoes of different color or variety 1/4 cup pitted Kalamata olives -- sliced 3 tablespoons small green olives -- halved 1/4 cup thinly sliced red onions 1/4 cup toasted pine nuts 1. Place the dressing ingredients in a blender and blend until smooth. 2. Combine the remaining ingredients in a salad bowl. Add the dressing and toss. Serve immediately.
