Chai Scones (Wemischner)

Amount Measure Ingredient -- Preparation Method

3 3/4 cups all-purpose flour

1/2 cup brown sugar

1 teaspoon baking powder

1 teaspoon ground cinnamon

1 teaspoon ground cardamon

1 teaspoon ground ginger

1/4 pound unsalted butter

2 egg yolks

6 ounces heavy cream or half-and-half

5 ounces chai concentrate

(purchased or see recipe)

EGG WASH:

2 egg yolks -- mixed with

2 tablespoons heavy cream or milk

 

1. Sift all of the dry ingredients together (flour, sugar, baking powder and

spices).

 

2. Place these ingredients into the bowl of an electric mixer. Add the butter.

Mix on low speed until the mixture resembles coarse meal.

 

3. Combine the egg yolks, heavy cream and chai concentrate in a small bowl. Add

this to the dry ingredients. Mix just until combined. Do not over mix. Remove

from the bowl to a lightly floured surface and knead briefly. Divide into two

equal parts and flatten each into a round measuring about 7 " in. diameter by

1/2 " thick. With a knife dipped in flour, score each round into eight equal

wedges. Brush with egg wash, score decoratively with a fork, if desired.

Sprinkle with cinnamon sugar and place in preheated 425 degree oven for about 25

minutes until golden brown.

 

4. Let cool slightly on a cooling rack and cut into eight wedges each. Makes 16

scones.

Chai Tea Concentrate

BASE:

2 cup water

1 stick cinnamon

pinch cardamom seed

3 cloves -- (3-4)

3 black peppercorns -- (3-4)

1 slice fresh ginger

TEA:

2 black tea bags

 

Boil the base ingredients in 2 cups of water for 8 minutes. Remove from heat.

Add tea bags, cover and let tea steep for about 15 minutes. Strain out the

spices when done steeping. Do not wring the bags.

 

Tip: Chai tea can also be made with a commercially prepared " Yogi tea. "
