Mushroom Tarragon Bisque

Amount Measure Ingredient -- Preparation Method

1 tablespoon canola oil

1 onion -- chopped

1 garlic clove -- chopped

4 cups sliced mushrooms

1 tablespoon tarragon

1 tablespoon lemon juice

3 cups soy milk

3 cups vegetable stock

salt and pepper to taste

 

Saute onion and garlic in oil in a large heavy pot. Add mushrooms, tarragon,

lemon juice, soy milk, stock, salt, and pepper. Bring to a simmer but do not

boil. Cook for 15 minutes. Serve.
