Guest guest Posted September 6, 2001 Report Share Posted September 6, 2001 * Exported from MasterCook * Leek and Potato Soup Recipe By :James Mays Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons canola oil 2 leeks -- chopped 2 potatoes -- chopped 1 garlic clove -- chopped 1/2 teaspoon salt 1 1/2 cups soy milk pinch white pepper Saute leeks, potatoes, and garlic in canola oil in a heavy pot for ten minutes over low heat. Add salt, soy milk, and white pepper. Cover pot with lid and simmer for 15 minutes. When potatoes, poked with a fork, prove to be tender, puree until smooth. (Hand blender is fine.) If too thick, add soy milk before serving.
