Guest guest Posted September 6, 2001 Report Share Posted September 6, 2001 * Exported from MasterCook * Artichoke Bisque Recipe By :James Mays Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons canola oil 2 potatoes -- cut in 1/2 " cubes 1 onion -- chopped 1 garlic clove -- chopped 1 2/3 cups canned artichoke hearts 3 cups soy milk 1/2 teaspoon paprika salt and pepper to taste chopped chives, to garnish Saute potatoes, onion, and garlic in oil. Add artichokes, soy milk, paprika, salt, and pepper. Bring to a simmer but do not boil. Cook until potatoes are tender. Puree and reheat gently. Garnish with chopped chives. Serve immediately.
