Hot and Sour Soup

Amount Measure Ingredient -- Preparation Method

8 cups vegetable broth

1 teaspoon whole black peppercorns

1 1-inch piece ginger root -- unpeeled, sliced

1 cup firm tofu -- cubed

1 cup mushrooms -- sliced

1/2 cup bamboo shoots -- drained

1/2 cup rice wine vinegar

2 teaspoons sesame oil

2 teaspoons dried chile peppers

6 green onions -- sliced

1 red bell pepper -- sliced

 

In a large pot combine broth, peppercorns, and ginger root and boil together.

Discard spices, add remaining ingredients and simmer. Ladle over bowls of rice.
