Guest guest Posted September 6, 2001 Report Share Posted September 6, 2001 * Exported from MasterCook * Black Soy Bean Burgers Recipe By : The Cooking Cardiologist, by Richard Collins, page 61 Serving Size : 4 Preparation Time :0:00 Categories : Beans And Legumes Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 14 ounces canned black soybeans -- drained, divided 1 small onion 2 cloves garlic -- crushed fine 2 teaspoons cajun seasoning 1/2 cup seasoned bread crumbs 1/4 cup Egg Beaters -- (egg substitute) Serving Size: 4 Place onion and garlic in food processor process until fine, add 1/2 can well drained black soybeans, process until beans are in mashed consistency. Place in medium mixing bowl, add remaining beans, cajun seasoning, bread crumbs and Egg Beaters. Mix thoroughly. Shape into 4 patties. Spray large fry pan, sauté on med-high heat. Brown both sides. Lower heat and continue sautéing until heat thoroughly. Serve with your favorite salsa, or on buns as a sandwich.
