Guest guest Posted September 6, 2001 Report Share Posted September 6, 2001 * Exported from MasterCook * Corn Potato Chowder Recipe By : The Cooking Cardiologist, by Richard Collins, page 59 Serving Size : 6 Preparation Time :0:00 Categories : Potatoes Soups And Stews Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 bunch scallions -- sliced 2 medium onion -- diced 2 cups peeled and diced potatoes 3 1/2 cups Edensoy Organic Soy Beverage 1/2 teaspoon salt 1 cup corn kernels liquid smoke -- to taste (optional) Serving Size: 6 Garnishes: Green: Chopped chives, parsley or scallion tops. Red: Sweet red pepper or finely chopped cherry tomatoes. In large microwave bowl, place sliced scallions, diced onions and diced potatoes, microwave on high until tender, 3-5 minutes. Transfer to large soup pot, add milk. Bring to boil, stirring constantly. Reduce heat. Add salt, pepper and liquid smoke if desired. Simmer covered with lid tilted for about 5 minutes. Add corn kernels, cook just until heated through. Ladle into soup bowls and garnish with either a green or red garnish.
