Spiced Tofu Loaf

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds firm tofu -- mashed

1/2 cup tomato sauce

2 tablespoons soy sauce

1 tablespoon dijon mustard

1/4 cup egg beaters -- (1 egg)

1/2 cup chopped fresh parsley

1/4 teaspoon ground black pepper

1/4 teaspoon ground ginger

1/2 teaspoon dried basil

1/2 teaspoon dried thyme

1 medium onion -- chopped

1 garlic clove -- crushed

1 cup stuffing mix

1 tablespoon olive oil

 

1. Preheat oven to 350 degrees.

 

2. Mix together all ingredients, except oil.

 

3. Use the oil to lightly cover the bottom and sides of a loaf pan.

 

4. Press the mixture into the pan and bake the loaf for about 1 hour.

 

5. Let cool for 10 -- 15 minutes before removing from the pan.

 

6. Slice and serve in the manner of a meat loaf.

 

TIP: If you don't use the entire package of tofu in a recipe, the remainder

keeps very well for up to a week if you put it in a container and cover with

cold water. Change the water every day until you use it all up.
