Guest guest Posted September 4, 2001 Report Share Posted September 4, 2001 (i've not tested this) * Exported from MasterCook * Curried Tofu and Cabbage Recipe By :TriColor Diet by Martin Katahn Serving Size : 6 Preparation Time :0:00 Categories : Tofu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup soy sauce 1/2 teaspoon cumin 1/2 teaspoon cardamom 1/2 teaspoon cinnamon 1/2 teaspoon turmeric 1 teaspoon salt 1 garlic clove -- crushed 1/2 pound firm tofu -- cut into small cubes 1 tablespoon olive oil 1 small cabbage -- cored and sliced 2 cups chopped celery 1 small onion -- chopped 1 sprig fresh parsley -- chopped 1 teaspoon grated or minced fresh ginger 1. Place the soy sauce and the next 6 ingredients in a small bowl. Add the cubed tofu and let it marinate while you prepare the rest of the vegetables. 2. With a slotted spoon, remove the tofu from the marinade and saute in the oil in a large skillet until slightly browned. 3. Add the remaining ingredients and cook, covered, for 5 -- 10 minutes over medium-low heat until the vegetables are as tender as you like them, stirring frequently. TIP: If you don't use the entire package of tofu in a recipe, the remainder keeps very well for up to a week if you put it in a container and cover with cold water. Change the water every day until you use it all up.
