Guest guest Posted September 4, 2001 Report Share Posted September 4, 2001 * Exported from MasterCook * Wheat N Soy Straw Cakes Recipe By : The Cooking Cardiologist, by Richard Collins, page 58 Serving Size : 4 Preparation Time :0:00 Categories : Breakfast Grains And Cereals Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 Quaker Oats Shredded Wheat Rounds 1 cup Edensoy Vanilla Organic Soy Beverage 1 teaspoon vanilla 1 tablespoon soy flour 1 teaspoon cinnamon 4 tablespoons frozen concentrate apple juice Serving Size: 4 In shallow bowl pour milk, add vanilla, flour and cinnamon, mix well. Dip wheat rounds in the milk mixture, covering both sides. Grill on nonstick griddle that has been sprayed. Use apple juice to keep from sticking, grill until golden brown on both sides. Sprinkle with sugar and cinnamon, top with lite pancake syrup if desired. Another great topping is a small amount of roasted soy nuts and syrup. Place soy nuts and syrup in small sauté pan, heat thoroughly. Pour over straw cakes. Serve with a grilled banana, lightly seasoned with lime juice. Comment: for an alternative you can dip the wheat rounds in frozen apple juice only, prior to grilling and top with no-fat yogurt ice cream. Nutritional analysis: Calories 141, Fat 1, Cholesterol 0.
