Uncle Ben's Barbecue Bonus Salad (No. 2)

Amount Measure Ingredient -- Preparation Method

3 1/2 cups converted rice

2 cups sliced celery

1/2 cup sliced radishes

3/4 cup lowfat mayonnaise

1 cup plain lowfat yogurt

4 teaspoons dijon mustard

1 cucumber -- diced

1 onions -- medium minced

1 large tomato -- cut into wedges

mixed salad greens

 

1. Combine rice, onion and celery in large bowl.

 

2. Combine yogurt, mayonnaise, mustard and salt. Add to rice mixture; mix well.

Cover and chill.

 

3. Just before serving, stir in egg, radishes and cucumber.

 

4. Serve in bowl lined with salad greens garnished with tomato wedges.
