Picnic Egg Salad

12 eggs

1/2 cup mayonnaise

1 teaspoon grated lemon rind

1/4 teaspoon cayenne pepper

3/4 teaspoon salt

1/4 teaspoon white pepper

 

Place the eggs in a large saucepan and add enough

water to cover them; bring to a boil over high heat.

When the water begins to boil, remove the saucepan

from the heat, cover and let sit for 20 minutes.

Drain off the hot water and run cold water over the

eggs. Add some ice cube to the water and let the eggs

cool for 5 to 10 minutes. Peel the eggs, them finely

chop in a large bowl. Add the remaining ingredients

and mix until well blended. Cover and chill for at

least 1 hour before serving.
