Guest guest Posted September 4, 2001 Report Share Posted September 4, 2001 * Exported from MasterCook Mac * Picnic Egg Salad Recipe By : Mr. Food's Simple Southern Favorites by Art Ginsburg Serving Size : 6 Preparation Time :0:00 Categories : Salads & Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 eggs 1/2 cup mayonnaise 1 teaspoon grated lemon rind 1/4 teaspoon cayenne pepper 3/4 teaspoon salt 1/4 teaspoon white pepper Place the eggs in a large saucepan and add enough water to cover them; bring to a boil over high heat. When the water begins to boil, remove the saucepan from the heat, cover and let sit for 20 minutes. Drain off the hot water and run cold water over the eggs. Add some ice cube to the water and let the eggs cool for 5 to 10 minutes. Peel the eggs, them finely chop in a large bowl. Add the remaining ingredients and mix until well blended.
