Creamed Cabbage

1 large head of cabbage -- coarsely

chopped

1 medium onion -- chopped

1 cup water

1 teaspoon salt

1/4 teaspoon black pepper

1 can cream of mushroom soup,

condensed -- (10 3/4 ounces)

2 ounces chopped pimientos -- drained

 

In a large pot, bring the cabbage, onion, water, salt

and pepper to a boil over medium-high heat. Cover and

allow to boil for 10 minutes. Drain off the water and

add the soup and pimientos; mix well. Reduce the heat

to low and simmer for 15 to 20 minutes, or until the

cabbage is tender.
