Guest guest Posted September 3, 2001 Report Share Posted September 3, 2001 * Exported from MasterCook * Sausage Broccoli Bake Recipe By : The Cooking Cardiologist, by Richard Collins, page 54 Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounces frozen chopped broccoli 8 ounces Gimme Lean Sausage flavor -- thawed and crumbled 3 cups fat-free croutons -- seasoned 2 cups nonfat cheddar cheese -- shredded 1 cup Pioneer Gravy made according to package directions 1 cup Egg Beaters -- (egg substitute) 10 3/4 ounces Edensoy Organic Soy Beverage Serving Size: 6 Cook broccoli according to package directions. Drain and place in large bowl. Crumble thawed sausage, add to broccoli. Add croutons and cheese. Combine well, arrange the mixture in a sprayed 8 x 12 inch baking dish. In the same bowl, mix gravy and egg substitute until smooth. Mix well. Pour over the broccoli mixture, covering all ingredients. Bake for 45 minutes in a 375 degree oven. Let stand 10 minutes before serving. I don't recall where I heard this, but I don't think it was from a " vegetarian source " , which is why I have been leery of it and never purchased it. I believe it lists " natural flavors " or something like that, which concerns me. I've stuck with buying the Loma Linda and Hain brands, which I know are definitely vegetarian. Does anyone know if, in fact, all or any variety of Pioneer Gravy is vegetarian? Just curious. . . . . This book's focus is very low-fat heart health, more than vegetarian so I'm trying to be careful not to post a recipe that might be a problem. This recipe is marked as being vegetarian. The first edition of Vegetarian Cooking for Healthy Living had a problem in that it used chicken broth. It just never dawned on the authors that veggie cooking did not include this product.
