Guest guest Posted August 31, 2001 Report Share Posted August 31, 2001 * Exported from MasterCook * Yummy Stuffed Green Peppers Recipe By :Sabbath Dinner Cookbook, Beck, Jarnes, & Jarnes Serving Size : 10 Preparation Time :0:00 Categories : The Adventist Kitchen Series Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 medium green bell peppers -- seeded & tops removed 6 cups boiling salted water -- (to 7 cups) 1 1/2 tablespoons olive oil 1 20 oz can Worthington Vegetarian Burger 1 large onion 2 cloves garlic 1/2 cup celery 1/2 cup carrots 2 packets beef-like seasoning and broth mix -- (such as G. Washington brand) 4 cups cooked rice 2 15 oz cans tomato sauce salt and seasoned salt to taste Heat oven to 350ºF. Cut thin slice from stem end of each pepper. Remove all seeds and membranes. Wash inside and out. Cook peppers in the boiling, salted water for 3 to 5 minutes. Drain. Saute vegetables and burger until vegetables are tender, add seasonings, rice, and one 15 ounce can of tomato sauce. Lightly stuff each pepper with the rice-burger mixture. Stand peppers upright in ungreased baking dish. Pour remaining tomato sauce over each pepper. Cover and bake for 4 minutes, then uncover and bake for 15 minutes longer. This can be made the day before, covered, and placed in the refrigerator. When ready to bake, just top with sauce and bake as indicated above.
