Guest guest Posted September 1, 2001 Report Share Posted September 1, 2001 * Exported from MasterCook * Miso Noodle Soup Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Side Dish Side dishes Soups Soups/Stews/Chowders Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- seaweed 2 cups broccoli florets -- small 1 red bell pepper -- sliced 1 cup scallions -- sliced 8 ounces mushrooms -- sliced 5 cups water 8 ounces whole wheat noodles 10 tablespoons white miso 2 1/2 pounds tofu -- cubed 1 teaspoon salt Put water in large pot. Add salt, broccoli, scallions, pepper and seaweed and mushrooms. Bring to boil Put heat down to medium low. Simmer until tender. Take a portion of the liqid. Mix with miso. Add mixture to soup. Add tofu. Simmer a few more minutes. Add noodles.
