Guest guest Posted August 31, 2001 Report Share Posted August 31, 2001 * Exported from MasterCook * Penne with Warm Apple Slices and Vegetables Recipe By :Meatless Diabetic Cookbook by Barbara Grunes Serving Size : 8 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- DRESSING: 1/3 cup cholesterol-free reduced-fat mayonnaise 1/3 cup nonfat plain yogurt 1/3 cup cider vinegar 4 garlic cloves -- minced 2 teaspoons stoneground mustard 2 teaspoons dried basil SALAD: 1 teaspoon lower fat margarine -- for frying butter-flavored cooking spray 2 cups thinly sliced red and/or green cooking apples 1/2 teaspoon ground cinnamon 2 tablespoons brown sugar substitute 1 pound penne or pasta of your choice 3/4 cup thinly sliced red onion 1 cup sliced cucumber or zucchini 1/3 cup minced watercress or parsley salt and black pepper In a small bowl, mix together the dressing ingredients. Cover lightly and refrigerate until needed Cook pasta according to package directions and drain. Meanwhile, heat margarine in sprayed nonstick frying pan. Saute apple slices over medium heat until lightly brown, stirring often. Sprinkle with cinnamon and brown sugar substitute. Keep warm. In a large serving bowl, toss pasta with warm apples, onions, cucumber and watercress. Blend in dressing. Season to taste with salt and pepper.
