I'm just not sure which I will try. (I posted several yesterday and more today.) kathleen * Exported from MasterCook * Crustless Spinach Quiche Recipe By : The Cooking Cardiologist, by Richard Collins, page 51 Serving Size : 8 Preparation Time :0:00 Categories : Breakfast Main Dishes, Vegetarian Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups Egg Beaters 99% egg substitute 1/3 cup all-purpose flour 1 teaspoon baking powder 2 cups nonfat cottage cheese 10 ounces frozen chopped spinach thawed and squeezed dry 1/2 cup thinly sliced green onions 1/4 teaspoon cayenne pepper salt -- to taste Serving Size: 8 Preheat oven to 400 degrees. Lightly spray a 10 inch quiche or pie dish with cooking spray. Mix all of the ingredients in a large bowl. Pour into baking dish and bake 15 minutes. Lower heat to 350 degrees and bake 35 to 40 minutes more or until filling is set and a toothpick inserted in the center comes out clean. Let cool 10 minutes on wire rack before serving.
