Mock Crab Cakes

Amount Measure Ingredient -- Preparation Method

1 20 oz can Worthington Low Fat Vegetable Skallops -- ground

1 medium onion -- chopped

2 tablespoons light mayonnaise

3 tablespoons mustard

4 eggs

OR 1 cup Morningstar Farms Scramblers

1 cup Italian seasoned bread crumbs

1 teaspoon Old Bay seasoning

2 tablespoons parsley

 

Combine all ingredients, fry into patties, and serve with tartar sauce.

 

PER SERVING: 186 calories; 6g fat; 108mg cholesterol; 683mg sodium; 15g carbs;

Karen,

 

Thanks so much for sending this recipe and the mock salmon and mock

turkey loaves! I had been having alot of trouble finding the

Worthington Skallops, even in the health food store, so I finally

ordered a whole case of it, and a case of the Diced Chik (which I think

could probably be used for the mock salmon in place of the Fri-Chik,)

and I was hoping to find some recipes for other ways to use the Skallops

besides the way I usually make them - breaded and fried or baked - so

this is great.

 

I have even been toying with the idea of trying to make mock gefilte

fish out of the Skallops, but haven't quite figured that out yet.

Anyone want to take a shot at it? Or, does anyone have an actual

recipe?

 

I am also going to have to find that cookbook. I know it's not the

Jewish Sabbath they are referring to, but I'm sure it would give me some

good ideas nonetheless. Thanks again, and I'll even post a recipe :-)
