Breakfast In A Loaf

Amount Measure Ingredient -- Preparation Method

1 round loaf bread -- 8-9 inch

4 Morningstar Farms Breakfast Patties -- crumbled

1 cup red bell pepper -- chopped

1 cup onion-chopped

1 cup grated fat-free cheese of choice

1 1/2 cups Egg Beaters -- (egg substitute)

1 medium tomato -- thinly sliced

4 ounces canned mushroom pieces

 

Serving Size: 8

 

Cut 2-inch slice from top of loaf; set aside for lid. Remove soft interior

of loaf, leaving a 1-inch thick wall and bottom. Place crumbled sausage

patties in bottom of loaf. Top with half of the cheese.. Set aside. In

small microwave bowl with cover, microwave chopped peppers and onion on

high for 3-4 minutes, drain well. In a medium sized, sprayed sauté pan,

scramble the Egg Beaters, to which you have added the chopped peppers and

onion. When done, layer this mixture over the sausage and cheese. Top

with thinly sliced tomato, mushrooms and the remaining cheese. Place lid

on loaf. Wrap in foil. Place on baking sheet. Bake in a 350 degree oven

for 45 minutes. Cut into wedges or slices and serve.

157.3. Protein 21.8, Sodium 674.
