Crumble thawed breakfast patties and add to vegetables. Pour 1 cup of Egg Beaters over mixture, stirring until eggs have set. Remove from heat. In a 9x11 sprayed baking dish place tortillas, fill one at a time. Place 1/4 of the egg mixture down the center of each, fold ends and secure with a tooth pick. Place a slice of cheese over each (I cut the slice in half to cover the entire top). Place in microwave just long enough to melt cheese. Serve with your favorite salsa, picante or taco sauce. Excellent served with fresh fruit. Nutritional analysis: Calories 240.1, Fat 4.1, Cholesterol 4, Carbohydrate 167.6, Protein 19.3, Sodium 8.59, Potassium 202.
