Breakfast Fajitas

Amount Measure Ingredient -- Preparation Method

4 flour tortillas

1/2 cup frozen hash brown potatoes

1/2 cup onion -- chopped

1/2 cup green pepper -- chopped

1/2 cup red bell pepper -- chopped

2 Morningstar Farms Breakfast Patties -- thawed

1 cup Egg Beaters -- (egg substitute)

Salt and pepper -- to taste

4 slices fat-free American or cheddar -- grated

salsa/picante/taco sauce -- of your choice

 

Serving Size: 4

 

Saute potatoes, onion, and peppers in small amount of water or vegetable

broth until tender. Crumble thawed breakfast patties and add to

vegetables. Pour 1 cup of Egg Beaters over mixture, stirring until eggs

have set. Remove from heat. In a 9x11 sprayed baking dish place

tortillas, fill one at a time. Place 1/4 of the egg mixture down the

center of each, fold ends and secure with a tooth pick. Place a slice of

cheese over each (I cut the slice in half to cover the entire top). Place

in microwave just long enough to melt cheese. Serve with your favorite

salsa, picante or taco sauce.

 

Excellent served with fresh fruit.
