Guest guest Posted August 30, 2001 Report Share Posted August 30, 2001 * Exported from MasterCook * Breakfast/Brunch Casserole Recipe By : The Cooking Cardiologist, by Richard Collins, page 48 Serving Size : 6 Preparation Time :0:00 Categories : Breakfast Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 slices bread slices 6 Morningstar Farms Breakfast Patties -- thawed 2 cups nonfat cheddar cheese -- shredded 2 cups Morningstar Farms Scramblers Egg Product -- thawed 3/4 cup EdenSoy Organic Soy Beverage 1 tablespoon dry mustard 1 cup onion -- chopped 1 cup green pepper -- chopped 1 can Campbells Healthy Request Mushroom Soup 1/3 cup EdenSoy Organic Soy Beverage salt and pepper -- to taste Serving Size: 6 The day before: spray bottom and sides of 9x13 baking dish, line with bread slices. Crumble thawed Morningstar Breakfast Patties over bread evenly. Top with shredded cheese. Microwave onions and green pepper until tender, spread over cheese. Sprinkle with salt and pepper to taste. In small mixing bowl mix together egg product, 3/4 cup EdenSoy milk and dry mustard. Pour evenly over the layers. Cover with plastic and store in refrigerator over night. Next day: in small mixing bowl, mix together the cream of mushroom soup and 1/3 cup EdenSoy milk. Salt and pepper to taste. Spread evenly over the entire top of casserole. Bake at 350 degrees 60 to 90 minutes. Let set about 10 minutes after removing from oven before serving. Comment.: 2 cans of drained mushrooms can be added to onion and pepper layer for variety.
