Guest guest Posted August 28, 2001 Report Share Posted August 28, 2001 * Exported from MasterCook * Chicory, Chard and Tomato Salad Recipe By :Eating with the Seasons by Paula Bartimeus Serving Size : 6 Preparation Time :0:00 Categories : 2send Autumn Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 7 ounces fine green beans -- trimmed 2 ounces chicory -- finely chopped 2 ounces swiss chard -- finely chopped 1 pound tomatoes -- chopped 2 ounces unsalted peanuts DRESSING: 1/3 cup plain goat's or soya yoghurt 1 clove -- trimmed, crushed 1 teaspoon paprika 1/4 teaspoon dried coriander leaf Steam the beans for 12 minutes until soft, place them in a bowl and leave to cool. Add chicory, Swiss chard, tomatoes, peanuts and dressing ingredients and gently combine. Chill until ready to serve.
