Honshu Salad

Amount Measure Ingredient -- Preparation Method

8 cups water

4 cups snow peas -- trimmed and cut in half

2 cups daikon -- chopped

8 ounces soba noodles

2 tablespoons rice vinegar

1 tablespoon miso

1 tablespoon water

1 tablespoon canola oil

2 teaspoons sugar

1 teaspoon fresh minced ginger

1 teaspoon Tabasco sauce

1 red bell pepper -- chopped

1 tablespoon fresh minced basil

1 tablespoon sesame seeds

 

In a large pot, boil the water and add and blanch the snow peas and daikon. In

another large pot, boil water and cook soba until tender, five minutes. Dry

noodles and add to vegetables. In a bowl, mix rice vinegar, miso, water, canola

oil sugar, ginger, and Tabasco. Toss vinaigrette and add to pasta and

vegetables. Top with bell pepper, basil, and sesae seeds and serve.
