Roasted Parsnips

Amount Measure Ingredient -- Preparation Method

2 pounds parsnips -- diced

1/4 cup flour

1/2 teaspoon salt

1/2 teaspoon pepper

1 tablespoon basil

 

Preheat oven to 425F. In a large pot, bring the parsnips to a boil and simmer

for 5 minutes, drain, and set aside.

 

In a bowl combine flour, salt, and pepper. Coat parsnips with the mixture.

Place in a large, greased Pyrex dish and sprinkle with the basil. Bake for 20

minutes or until golden, turning occasionally.
