Mexican Quinoa Salad

Amount Measure Ingredient -- Preparation Method

1 teaspoon olive oil -- plus

2 tablespoons olive oil -- divided

1/2 cup quinoa -- rinsed in

cold water and drained

1 cup vegetable- or chicken-flavored bouillon

1/4 teaspoon dried tarragon

1 teaspoon salt

1 1/2 tablespoons fresh lime juice

ground black pepper -- to taste

1 cup canned drained black beans

1 cup frozen corn kernels -- defrosted

1 small red bell pepper -- cut in thin strips

1 tomato -- chopped

2 scallions -- chopped

1/2 tablespoon chopped fresh basil

1 tablespoon chopped fresh cilantro

2 tablespoons chopped fresh parsley

1/2 teaspoon chili powder

 

1. Heat 1 teaspoon of the oil in a small saucepan.

 

2. Add the quinoa and cook over low heat, stirring, for 5 minutes.

 

3. Stir in the bouillon, tarragon, and salt and bring to a boil. Then lower the

heat and simmer, covered, for 15 minutes. Fluff with a fork and set aside.

 

4. In a large bowl, whisk the remaining oil with the lime juice and pepper.

 

5. Stir in all the rest of the vegetables and spices.

 

6. Add the quinoa and stir.

 

7. Taste and adjust the seasonings.

 

8. Chill for at least 1 hour, then let it come to room temperature and serve.
